Best Pizza Recipe

Best Pizza – We have tried many pizza dough recipes over the years but when we found this one a few years ago and we have  stuck with it. It makes a nice crispy base – just how we like it. It takes time to make pizza from scratch but it is definitely worth it.  This amount makes 4 baking tray sized pizzas, and the best thing is that there will always be pizza left over – next day’s lunch already done.

For the base you need:    50 g yeast
1 tsp sugar
2 dl water (37 C if using fresh yeast)
2 dl plain flour

Mix yeast with water, add sugar and flour. Mix and let it rise for 30 minutes in a warm place. The dough starts bubbling (fermenting).

5 dl water (37 C)
2 tsp salt
12-15 dl plain flour (or durum flour)

(If you use durum flour or replace some of the plain flour with it, the rolling out of the dough will be easier) Add the rest of the ingredients and make it into smooth dough. I use a kitchen mixer. Sorry, but I hardly ever measure the flour, instead, go with the gut feeling. I leave the dough slightly softer without it being too sticky rather than too hard. Let the dough rise at least an hour until it has doubled in size.

In the meanwhile, you can prepare the filling. I always start with making the tomato sauce, and then chop everything onto plates – makes the filling process go smoother. You can of course use any filling you prefer, and make different kinds of pizzas. Below is the list of the ‘standard’ ingredients we use.

Tomato sauce:        1 can chopped tomatoes
2 tbls tomato puree
Salt
Peppar
Sugar
Oregano
Garlic

Mix all the ingredients in a mixer into a smooth sauce. You can season the sauce as you wish. This is what I use. If I don’t have oregano, I use thyme.

Filling:            Ham
Onion
Tomato
Green pepper
Button mushrooms
Pineapple
Green olives
Mozzarella (or other type of cheese)
I always buy a piece of ham that is smoked. This is tasty and gives the pizza more flavour.

Once you have done the sauce and the forever ending chopping, it is time to roll out the dough. Divide the dough into 4 to make 4 big pizzas. You can also make 8 smaller ones. I always roll it directly onto the baking parchment. I place a damp thin cloth underneath the paper as to stop it from sliding all over the place. Then it is easy to just lift it onto the baking tray.

Spread the tomato sauce on the base and sprinkle over the wanted filling, mozzarella being the last one. Bake at 225 C degrees for about 20 minutes, until the cheese has got slightly golden and the crust has got some colour.
