Indian Butter Chicken recipe


Indian Butter Chicken Curry – This recipe is one of my favourite for the family and is enjoyed accordingly.

2 dl natural yogurt
50g ground almonds
1 tsp chilli powder
1/4 tsp crushed bay leaves
1/2 tsp ground cloves
1 tsp ground cinnamon
1 tbls garam masala
1/2 tsp ground cardamom
1 tsp ground ginger
3 cloves garlic crushed
400g can tomatoes
2 tsp salt
500 g chicken in thin slices
75g butter
1 tbsp oil
2 medium onions, sliced
2 tbsp fresh coriander, chopped
4 tbsp cream

How to make butter chicken:
Place the yoghurt, ground almonds, all the dry spices, ginger, garlic, tomatoes and salt in a mixing bowl and blend together thoroughly. Add the chicken into the yogurt mixture. Set aside.
Melt together the butter and oil in a pot or frying pan. Add the onions and fry until soft. Add the chicken mixture, bring to the boil and let simmer until chicken is thoroughly cooked.
Stir in about half of the coriander and pour over the cream. Mix well and bring to the boil. Garnish with the remaining coriander. Serve with rice.
