smoked tuna on guacamole and rocket

August 22, 2010

The last 6 weeks I have been very busy starting a new cold smoked food business, so this recipe was developed for our website at The Smoking Shed.
To make the gaucamole lightly mash a couple of avocado’s with finely sliced spring onions, a few chopped pickled jalapeno chillies (depending on how hot you like it), the juice [...]

Many years ago, I can’t even remember when, I bought the ‘Pret A Manger’ recipe book.  A collection of sandwich and salad recipes.  Its published in 1996 ten years after they started, and on the eve of there 50th store opening, so this was when Pret was in its earlier hay days. The UK retail sandwich [...]

oven baked hake with basil, lime, ginger and garlic

June 1, 2010

With all my recent baking escapades, I needed some temple food to get back on track, and kick start the regime again.
This is just a really healthy way to cook a piece of fish without compromising on flavour.  I used hake, but a firmer fish like kingklip would probably work even better. Its fuss free [...]

cous cous tabbouleh with feta and pomegranate seeds

May 25, 2010

I was in search of flavour.
I had a pomegranate and some feta in the fridge needing to be placed.
I had recently been chatting to my delightful Lebanese foodie friend about tabbouleh, so this has been at the back of my mind.
I’m loving mint at the moment, so off I went in search of bulgar wheat but after 2 [...]

about 5 brown onions, peeled, sliced in half and cut into thin rings
1 tbsp olive oil
1 clove of garlic crushed
a few [...]

roast chicken and avo vietnamese rolls:with an anchovy-spring onion mayo dressing

April 21, 2010

Vietnamese rice rolls are so versatile, I thought I would experiment away from the typical Asian flavours, and was thrilled that they worked out so well.
I had wanted to do a kind of ‘roast chicken caesar salad wrap thing’, but  due to a few ingredient availability issues, they evolved into these.
You can add anything you like, but this [...]

spicy pickled carrots

very easy way to pickle and preserve a few carrots

I have never pickled anything before but am wild about the concept of preserving.  I also really love the idea of eating the same food and experiencing its character in  many different ways. A friend sent me the link to this recipe on this great site dedicated [...]

simple salad of red onions, tomatoes, green pepper and feta

March 7, 2010

I love red onion and tomato together, just as is, with red wine vinegar. Sweet and crunchy with just a little bit of acidity.
Building on this very basic salad, I added a few slices of a very fresh green pepper and a few crumbles of feta.  Sprinkle over some oregano, Maldon salt and black pepper, and drizzle with [...]

zesty cous cous salad with sprouts, spring onions, coriander and toasted almonds

March 2, 2010

Soak 200gms of cous cous with 2 cups of hot stock or boiling water, fluffing with a fork every now and again.  Add a bit more water if it is not quite soft enough. I work on a ratio of 1 cup of boiling water or stock per 100gms of cous cous.
Chop up 4-6 spring onions, a handful [...]
